Tator Tot Casserole

I learned that there are sooo many variations of Tator Tot Casserole. In the south, Tator Tot Casserole is well….. It’s called Tator Tot Casserole but I don’t know that I would consider it Tator Tot Casserole. No veggies, but instead it has Rotel in it. I had to ask what Rotel is because it’s not used here in the PNW. So here’s how I make it:

Bag of Tots (typical or flat, doesn’t matter)
1 lb ground beef
Bag of frozen mixed veggies
2-3 tbsp flour
1/4 water

Brown meat with your favorite seasonings. I like onion, garlic, pepper and a seasoning salt. When it’s basically done add half to whole bag of frozen mixed veggies. Add flour and water. Stir and finish cooking the meat. Drain the meat if needed.

Put in casserole dish (then if you’re like me, add a layer of shredded cheese because cheese) then top with tots all in rows.
Bake uncovered about 15-20 mins at 425 until tots are crispy. Enjoy

Never any leftovers

Note: you can use any veggies you have in the freezer. Last time I made it I only had some peas and corn so that’s what went into the casserole.

    I make tons of variations on this – Sloppy Joe bottom (or Manwich if you are in a hurry) tater tots and cheese on top; beans and wienies on the bottom tater tots and cheese on top; or my favorite is a taco bottom and tater tots and cheese on top. You can add corn, beans, peppers, onions to each one whatever you like. 🙂
